Sometimes you are busy and want an easy and reasonably quick lunch. Then this delicious salad might be for you!
at the request of 1 of my english friends:
Indian-inspired spring salad met bhuna prawns
What do you need for 2 people?
For the prawns:
16 tiger prawns
1 tsp turmeric
1 tsp coriander powder
1/2 tsp cumin powder
1 tsp fennel seeds
1/2 tsp salt
3 cloves of garlic
1 tsp ginger
1 tblsp veg oil
1 tbsp ghee
For the salad:
75 g broccoli
50 grams peas
75 grams courgette
20 grams of spinach
handful of rocket
coriander (you never have enough of that)
chives
50 grams of feta cheese
For the dressing:
4 tablespoons Greek yoghurt
2 tablespoons extra virgin olive oil
juice of half a lemon
1/2 teaspoon cumin
1/2 teaspoon coriander
1 tablespoon fresh coriander, coarsely chopped
salt and pepper
mix the oil/salt and all the spices, garlic & ginger and let the prawns marinate in this for 5 minutes.
mix all ingredients for the dressing
for the salad:
Put the broccoli and courgette in a food processor/blender for a few seconds and grind them into very small pieces. If you are good with a chef’s knife, you can also cut the courgette into very small cubes (which is even better for the texture of the salad!) Then blanch them very briefly together with the peas. rinse with cold water and drain well. Then add the dressing and mix together.
Then cut the spinach, rocket, chives & coriander into smaller pieces.
Build the salad…
by placing the mix vegetables with the dressing in a layer at the bottom of the plate. Then lightly sprinkle the spinach, rocket, chives & coriander, along with the feta on top.
Finally, fry the prawns in the ghee and place them neatly on top of your salad
